Beetroot has super powers, its high in vitamin C, Potassium, Iron and Fibre.
1 Cooked Beetroot
1 Ripe Banana
1/2 cup milk (or milk alternative)
3/4 cup self raising flour
1 level Teaspoon baking powder
Blend all ingredients together until smooth.
Heat a Tbs of oil (ideally coconut) in a pan and then add 1 heaped Tbs per pancake.
Shape into circles with a spoon and flatten with a spatula to cook through.
When bubbles start to show flip the pancake to cook the other side and cook for a further minute.
Serve straight away and enjoy.
