Start your Halloween in spooky style with these Squashed Spider Baked Oats! The lemon and blueberry flavour will be a sure surprise when you tuck in. Suitable for all the family! 

 

 

Ingredients

 

  • 60g rolled oats
  • 1/2 teaspoon baking powder
  • Zest and juice of half a lemon
  • 1 egg
  • 100ml milk
  • 1 tablespoon maple syrup
  • Heaped tablespoon greek yogurt (plus extra for decorating)
  • Handful of blueberries

 

Method

  1. Preheat oven to 180°C
  2. Add all of your ingredients (except the blueberries) to a blender and blitz for around 20-30 seconds.
  3. Pour the mixture into an EasyMat MiniMax and add your blueberries (keeping a few behind for decoration). Distribute the blueberries through the mixture evenly.
  4. Bake in the oven for 20-25 minutes until golden and leave to cool until lukewarm.
  5. You can now decorate with some greek yogurt by adding it to a piping bag (or sandwich bag) and snipping the corner, creating a spiders web on-top of the baked oats.
  6. Squash the leftover blueberries between your fingers (these are your squashed spiders) and add to your creation.
  7. Serve and enjoy 🙂
