A hearty, healthy veggie stew, packed full of goodness.


1 tbs olive oil

1 red onion, diced

2 garlic cloves, chopped small

2 sweet potatoes (medium)

1 courgette, chopped

1 teaspoon ground coriander

A small hand-full of fresh coriander

2 Tbs tomato puree

1 Tin chopped tomatoes

1/2 cup red lentils

350ml vegetable stock


Heat the oil and fry the onion for a few mins until soft.

Add the garlic and ground coriander and stir through.

Add sweet potato and cook for a few mins before adding the courgette, lentils, chopped tomatoes, tomato puree, veg stock & fresh coriander.

Simmer for 25 mins, stirring throughout until potato and lentils are cooked.

Note – Refrigerate up to 4 days and freezable up to 4 months.
