1 tbs olive oil

1 red onion, diced

3 cloves of garlic, minced

2 sticks celery, chopped

1 courgette, chopped

2 carrots, peeled and chopped

1 1/2 cups butternut squash, chopped

1 cup red lentils

2 teaspoons ground coriander

1 teaspoon ground cumin

90ml vegetable stock


Heat the oil in a large pan until hot.

Add the onion and garlic and cook for approx 5 mins until soft.

Add the spices and mix through, then add the celery, courgette, carrots, butternut squash and cook for a further few mins, stirring throughout.

Add the lentils and stock and leave to simmer for 20-25 mins until cooked.

Transfer to a blender and blend together (in batches if needed).

Add extra water if needed depending on your desired consistency.
