Vitamin A packed Vegan Curry.


1 medium sweet potato

1 red pepper

3 small red onions or 1 large

1 tin chopped tomatoes

1 tin red kidney beans

1 & ½ tsp smoked paprika

1 & ½ tsp ground cumin

1 tsp ground cinnamon

¼ tsp mild chilli powder (optional)


Wash your red pepper and dice

Peel and wash your sweet potato and dice, add to a roasting dish with a drizzle of olive oil and roast at 180d for 20-30 minutes (depending on the size of the pieces).

Meanwhile, finely dice your red onion and add to a pan with a splash of olive oil and sauté until soft. Once softened add your tomatoes, drain and rinse your kidney beans and add these.

Add in your spices and place the lid on the pan and leave to simmer. Once your sweet potato is cooked remove from the oven and add to your chilli, leave to simmer for another 5 minutes and serve.

If you prefer the chilli looser, add some water.
