Chickpeas are an excellent source of protein, they have a variety of health benefits.
1 can of chickpeas
1 garlic clove
1 medium grated carrot
½ medium grated red onion
1 handful of baby spinach
1 tsp garlic and herb seasoning
½ tsp black pepper
½ tsp smoked paprika
½ puff pastry roll
1 egg (egg wash)
Wash and grate your carrot on the fine side and squeeze out the excess water, do the same with your onion, but grate on the opposite side.
Drain and rinse your chickpeas, add them and all the other ingredients to a blender and blend until smooth.
Roll out your puff pastry roll and cut in half length ways, place your filling in the middle of your pastry, length ways and egg glaze the pastry around the mixture and then lift the bottom side of the pastry over the mixture and then roll so the seam is underneath.
Gently with a knife make small lines across the pastry for decoration, place on a lined baking tray, egg glaze and sprinkle with some seeds (optional, you can serve without seeds).
Bake at 180d for 20-25 minutes.
